This is an oldie but a goodie that I published back in 2011, but thought it was worthy to publish again. What I love about this vegetable fried rice recipe is that you can substitute just about any veggies you have in the house. Plus, you can easily make it gluten free by using gluten free soy sauce. I’ve been using carrots, zucchini, sugar snap peas, mushrooms, and broccoli. You get just about all the nutrients you need from this one dish – protein from the eggs, vitamins from the veggies, whole grain fiber from the brown/wild rice.
I could eat vegetable fried rice every day, no matter what the veggies are. I love all-in-one meals – so satisfying and comforting. And great as leftovers! This recipe came from http://www.bhg.com/recipes. Do you have a favorite all-in-one recipe? A different vegetable fried rice recipe? Don’t forget to click on the recipe for a printable 3×5 pdf card – this is NEW to my recipe blogs!
