Meatless Monday – Vegetable Fried Rice

This is an oldie but a goodie that I published back in 2011, but thought it was worthy to publish again. What I love about this vegetable fried rice recipe is that you can substitute just about any veggies you have in the house. Plus, you can easily make it gluten free by using gluten free soy sauce. I’ve been using carrots, zucchini, sugar snap peas, mushrooms, and broccoli. You get just about all the nutrients you need from this one dish – protein from the eggs, vitamins from the veggies, whole grain fiber from the brown/wild rice.

I could eat vegetable fried rice every day, no matter what the veggies are. I love all-in-one meals – so satisfying and comforting. And great as leftovers!   1. I am a personal fan of the all-in-one dish. Some of my favorite meals are the ones without the fuss. When I was young, my grandma used to make cook-up, which is one of my favorite Caribbean dishes. Basically, you stew meat then you add in rice and canned beans. It was always tasty. You don’t have to spend hours sweating bullets in the kitchen to give your family a tasty well-balanced meal. Thanks for the recipe!
