Meatless Monday – Sweet Potato Mallow

You may just balk at this recipe as it seems so dated, so sweet, so canned, and so darn easy! But, let me tell you, it is a HUGE hit at my in-laws for Thanksgiving. Such a hit that last year when poor Bob threw his back out, and we thought we weren’t able to go to the in-laws at the last minute, my grown nephews were scrambling to run to the store to buy the ingredients for this dish. Bob valiantly rallied and we did end up going, and I think they were happier to see the sweet potato mallow than they were to see us! ;)

  1. This looks delicious. My sweet stepmom makes the yummiest sweet potato souffle, and I generally eat more of it than the turkey. :-D
